The five basic cooking techniques of sauté, roast, grill, poach and braise are exemplified in twelve chapters full of wonderful Simply Good recipes. Each chapter is written as we teach our classes, in three courses. This cookbook will help reinforce skills you already have, or introduce the basics to new cooks.

The Simply Good store offers a supply of items we find essential and beneficial in making food taste great. We travel to small, ethnic markets and search far and wide to bring our students products such as Madagascar Vanilla Bean Paste, Vietnamese Fish Sauce, French cornichons, Japanese panko and Tupelo honey from the southern U.S. We carry a full line of O Olive Oil® oils and vinegars—our favorite.

We practice what we preach, offering the tools we use in our kitchen every day: OXO utensils and tools, All-Clad pots and pans, Microplane® graters, Wüstof® knives and sturdy cotton aprons. We make and carry a variety of seasonal products in our freezer, from sausages to pot pies and chicken stock. Simply Good specialty products include hand-made hard-rock maple cutting boards—custom designed and wood-burned by Shanny—and beautiful Holland maple bowls, also customized to your specifications.

Along with our long time favorites of All-Clad, Wüstof, Oxo, Microplane, Vita-Mix and O Olive Oil, we have added to the Simply Good general store. Grill Surface Thermometer
Just what is high heat anyway? And why should I care?
Your recipe calls for placing a pan over high heat, meaning 425°F. We’ve found that every stove is wildly different. On an electric stove, high heat (425°F) might be #4, a gas range might be much higher, and a commercial-style gas cooktop might be even lower.
  

 

There’s a reason you need to know just how your cooktop operates. Most oil burns at 450°F—if your pan is this hot, you’ll see smoke, and maybe even fire! The ideal temperature for sautéing and searing is an even 425°F. At this temperature, your oil will develop a beautiful rippled sheen; this means it’s ready to go. How can you tell if your pan is ready? Place a grill surface thermometer directly into a dry pan. When the desired temperature is reached (and holds for 5 minutes), your pan is ready. You can now remove the thermometer (please use tongs—it’s hot!). Versatile as it is handy, the grill surface thermometer can also be used in the oven or on the grill.
